Yes, I am one of those crazy folks who begins dreaming about everything pumpkin at the end of July. I know, I know.  But around here schools start up at the beginning of August, so the back-to-school displays are all over the place and it's just a Pavlovian response that I just cannot resist! And really, why would I want to?  Pumpkin is magical.  It's delicious in sweets, in savories, and I am literally (figuratively) unable to get enough.  So, please forgive me for scooching the season forward just a smidge.

The thing about being married to someone for a dozen or so years and having a slew of kids is that after a while, your idea of a great night shifts.  A lot.  Fifteen years ago at the start of our relationship, a great date would be an afternoon at the beach followed by a lazy early evening nap, topped off with dinner and dancing at a bar or club.  Ten years ago, maybe an expensive meal after work followed by a late movie.  Now?  Sharing a bag of popcorn or dessert on the couch while binging on Netflix after the kids are asleep.  

This isn't a complaint.  I mean, I guess I wouldn't mind a kid-free day at the beach here and there, but mostly I'm just happy we're still able to make time for one another and enjoy things as a couple.  If the kids are in bed at a reasonable hour, I like to make a special meal or dessert for just us.  And this Flourless Dark Chocolate Mug Cake for Two is a personal favorite.

And, my obsession with chipotle pepper continues.  Is this a nationwide thing?  Am I a trendsetter? Probably not, but I'm sure enjoying myself, regardless.  This dip is the perfect hardy Fall evening (okay, or any time really) football party dip.  It's cheesy, meaty, a little bit spicy, and just keeps you coming back for more and more.  I think you'll love this Spicy Chipotle Cheeseburger Dip and it will become part of your regular rotation like it has mine!

This Chicken Salsa Soup is about as easy as recipes come.  I love this soup as an alternative to Taco Tuesdays.  My kids like doing Mexican themed food on Tuesdays, but a girl can only take so many tacos!  It's also great because you get it going in the morning and by dinner time it's ready to be served up with almost no fuss.

We like to use a medium heat salsa which gives the soup a great flavor, but no real heat.  You could totally amp it up with a spicier salsa or some chili pepper if you prefer though!

What do you do when the calendar says "Back to School Season" but the weather report says "Heat Index of 105 with Tropical Storm brewing" --- you think I kid, but this is really my life. (Yes, it's okay to feel bad for me).  Rather than mourn the fact that boots and sweater weather is months off (if it shows up at all), I did the next best thing and celebrated the season Florida style with a quick No-Churn Pumpkin Spice Ice Cream.

This Pumpkin Spice Ice Cream is so easy to make and tastes like a creamy, light and fluffy pumpkin pie filling in ice cream form.  I topped mine with a few sprinkles and some caramel magic shell and was in Autumn heaven.  Some folks may suggest you simplify this recipe further by using pre-mixed pumpkin pie spice (and I won't come physically stop you), but I'm saying it now, this combination of spices much better.  So, do what you will.  So long as it's my way.  (See what I did there?)

The thing I've learned about traveling around the country and eating foods of the same name in a dozen different restaurants, is that pretty much all French onion soups are the same.  And every po'boy is different.  I'm not sure what it is about the po'boy that makes chefs and cooks alike get creative in the kitchen, but it's become a bit of a game when we go somewhere new to see what's passing for a Po'boy in any given town.  

Most recently we visited New Orleans, home of the po'boy, and even there it seems no one could decide on any given formula!  We found shrimp, crab, lobster - even chicken.  Some were fried and drizzled with sauce while others were steamed and drenched.  A few were topped with lettuce and tomato, but the best ones were just piled high with meat.  Today I've put together my favorite components of all the po'boys we've encountered so far and if I do say so myself, it was incredible.
