
Ingredients:
- 1 box chocolate cake mix
- 2 eggs
- 1 stick butter, softened
- 1/4 cup coconut flour (White or whole wheat would work fine too. You could even skip this ingredient if you want a cookie that spreads more)
- sprinkles (optional)
Instructions:
- Add all ingredients to a bowl and beat with electric mixer at increasing speeds for 1 -2 minutes, until batter is well blended.
- Spoon batter onto parchment lined cookie sheet with a teaspoon.
- Bake for 8 - 12 minutes.
Yields approximately 40 cookies.

Even easier -- one box cake mix plus 8oz cool whip -- mix well (I end up using my hands), roll into little balls which can be rolled in sugar or nuts if desired, then bake. Best flavors? Chocolate, red velvet (rolled in powdered sugar - they crackle and are sooo pretty!).
I make these cookies too and they're so nice an easy to do. My mom adds quick cooking oats instead of the flour to make them a tad "healthier." :)
