Spinach Veggie Dip.



Okay, so this tasty Spinach Veggie Dip recipe predates my foray into the wide world of Paleo, but to be perfectly honest, I will totally still eat it.  I'd just skip the crackers and use some cucumber or sweet pepper slices.  Or maybe jicama? I keep hearing about the awesomeness of jicama as a substitute for corn chips or taco shells.  Have you tried it? I'm so curious!

 Veggie Spinach Dip

Spinach Veggie Dip Ingredients:

  • 1 cup mayonnaise (I used Hellmann's®)
  • 1 package vegetable recipe mix (I used Knorr®)
  • 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry (make sure it's well chopped, mine wasn't and required a little extra hacking)
  • 1 container (8 oz.) sour cream
  • 1 container (8 oz.) cream cheese
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped water chestnuts

Spinach Veggie Dip Directions:

  • Combine ingredients well and chill in the refrigerator. 
  • Serve cold with crackers, pita chips, cucumber slices, carrot chips, sweet pepper slices, or jicama slices! (And if you use jicama, email me to let me know how it goes!)

For this recipe (and actually all my mayo recipes as of late) I used Hellmann's with Olive Oil.  Have you tried it?  Quite delicious.  I won't lie, I'm always excited to help promote products I already use and love.
