Yes, yes, I’m still on the crazy paleo kick.  I’ve lost 15 pounds though without ever being hungry, so hey, why not.

Anyway, I keep seeing people write about this amazing two ingredient chocolate ice cream.  And every time I look it’s the same recipe.  Frozen bananas, cocoa powder, and a food processor.  Lots of scraping and mixing. Sounds like a major pain, so I never bothered to try it.

But then those nice folks at Hamilton Beach sent me the cutest little soft serve ice cream maker, and suddenly a light bulb went off.  I will have my decadent dark chocolate ice cream and there will be NO scraping!  And NO stirring! And it will be DELICIOUS!  And so it was.

Ingredients
 

  • 2 very ripe bananas peeled*
  • 1 tablespoon cocoa powder I'm partial to Hershey's Special Dark

Instructions

  • Put bananas and cocoa powder in a container and blitz with your immersion blender until it's liquid (only takes a couple seconds).
  • Pour mixture into the frozen ice cream bowl and churn for ten minutes.
  • Enjoy!
