Paleo Banana Nut Muffins

These Paleo Banana Nut Muffins are the perfect "on the go" snack.  I love them warm and smothered in butter.  Who says you can't have your muffin and eat it too.

Paleo Banana Nut Muffin Ingredients:

  • 5 ripe bananas, pureed
  • 5 eggs
  • 1/4 cup coconut oil (melted)
  • 2 teaspoons baking soda
  • 1 1/2 cups hazelnut flour
  • 1 1/2 cups almond flour
  • 1 cup smashed walnuts
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon real vanilla extract

Paleo Banana Nut Muffin Directions:

  1. Stir ingredients together and pour into a muffin tin.  (I strongly suggest using silicone baking cups, as the muffins tend to stick to paper.)
  2. Bake at 350 degrees for 20 to 25 minutes.
  3. Enjoy!

  1. Looks great! I have not purchased hazelnut flour before! I think I am going to have to sub more almond meal till I get some. Making these now for our Saturday afternoon car trip!!

    1. OK, just came out of the oven. I used all almond flour and I put it all in a blender, then hand stirred in the extra nuts, which I used pecans instead of walnuts. THEY TURNED OUT AWESOME!! My silicon muffin cups are smaller than normal, so I put the left over batter in some little tart pans and made "muffin tart/cakes". Same awesomeness! Thanks for the recipe! My 4 yr old loves them too! How excited I am that they do not have any sweetener, but she loves them anyway!
