My girlfriend Stacy introduced me to this salad. Stacy who claims she's, "not much of a cook." Stacy who also brought us The Best Roast Broccoli Ever, and Garlic Herb Cream Cheese Dip. Hey, Stacy. I'm calling you out, girl. I think you're pretty darn fabulous at putting together some tasty chow.
Anyway, about the salad. Ohhhhhh, lordy. This Apple, Blue Cheese and Walnut Salad is what other salads want to be when they grow up. I'm pretty sure this salad went to college. Possibly even grad school. It's sweet, savory, tangy, crisp, crunchy, deliciously refreshing salad perfection. Summa Cum Salaude. That's what we should've called it.
Apple, Blue Cheese and Walnut Salad, Ingredients:
- Lettuce, I like a colorful spring mix
- Apples, thin sliced
- Blue cheese, crumbled
- Chopped walnuts
- Apple cider vinaigrette (you can buy a dressing, but making this one would be better, *hint hint*)

While I would gladly eat this salad all summer long, the rest of my household requires something more. And in honor of it being summer, I like to pair it with fried chicken. A fan favorite around here. I'm going to give you a confession though - I can't fry chicken to save my life. Braise a lamb, sure! Roast a duck? You got it! Poach an egg? Hey, ho, absolutely! Fry some chicken? Noooooo.
One of these days I'll figure it out, but in the meantime, I go the easy route and pick up a package of fresh fried chicken from the deli. And bonus, my kitchen doesn't smell like cooking oil for days on end. I grabbed an 8 piece pack from our local Walmart Neighborhood Market along with the salad fixings (and possibly some dessert).
