Flourless Oatmeal Cookie Bites

This Flourless Oatmeal Cookie Bites Recipe was developed for Collective Bias and advertiser. Mama Loves Food has been compensated for time and work. Opinions and recipes are mine alone. #CollectiveBias #MyLittleRemedies

Two of my five kids were colicky.  The first and the last.  And I'm pretty sure the last is the last because ZOMG he was colicky.  When I say colicky, I don't mean I had fussy babies, or babies that didn't sleep well, I mean, my babies cried miserably for hours on end.  It usually started in the early afternoon  (we called it the witching hour) and went on until 8 or 9 at night.  Sometimes earlier.  Sometimes it started as soon as they woke up in the morning.  Always it was awful.

There's nothing to bring a new mother down like an infant that is perpetually unhappy.  To this day, I get a (very literally) squeeze in my chest when I hear a newborn cry for longer than a moment or two.

Perhaps this is part of the reason I'm so insistent on offering food and help to new parents.  I try to stay away from unsolicited advice (although, let's be honest, I'm probably failing on that point), but make a very conscious effort to make the difficult transition a little smoother.

These Flourless Oatmeal Cookie Bites are one of my favorite desserts to bring a new mama (usually along with a yummy one-pot chicken dinner). Oatmeal is shown to help with milk production in nursing moms, and even if they're not nursing, oatmeal cookies are delicious.  There was no magic colic cure when my babies were born, but they did have sensitive tummies, so I always (and still do, actually) had gas drops on hand.  I even brought them to the hospital with me knowing that they were safe for itty bitty babes.  Lucky for those of you still baking buns, though Little Remedies® has recently come out with Advanced Colic Relief Drops - (they're NEW and available at Target!) which I am now vowing to give all new moms along with their Welcome Baby Meal.

----------

Flourless Oatmeal Cookie Bites, Ingredients:

  • 3 cups quick cooking oats
  • 2 sticks butter, room temperature
  • 2 eggs
  • 1/2 tablespoon real vanilla extract
  • 1/2 cup brown sugar
  • 1/2 cup raisins
  • optional glaze:
    • 1 cup powdered sugar
    • 1/2 teaspoon real vanilla extract
    • 1/2 tablespoon milk or cream (I prefer heavy cream)
    • 1/2 tablespoon melted butter

Flourless Oatmeal Cookie Bites, Directions:
  1. Blend butter, eggs, and vanilla together.  Add brown sugar and beat until incorporated.
  2. Add oats, and then raisins.  Blend or mix until all ingredients are incorporated and a dough is formed.
  3. Shape the dough into cookies on a parchment lined baking sheet (these cookies will not move or grow, so form them in the shape you want them to take and place as close together as you'd like).  Bake at 350 degrees for approximately 15 minutes.
  4. Optional glaze: combine butter, vanilla, and cream, then slowly whisk into powdered sugar until desired consistency is reached.  Drizzle over cooled cookies and allow to set.
  5. Enjoy!
