Blueberry Ice Cream is my saving grace when the kids insist on swimming in the pool all. day. long. Which means I have to sit on the patio and watch them all. day. long. But I do it, because I remember how special those long summer pool days are. Super duper special.

- 1 can coconut milk, chilled overnight
- 3 cups blueberries, frozen
- Sugar, if desired

- Combine blueberries and coconut milk in a bowl and blend until you reach desired consistency.
- Serve immediately!

How to Make Blueberry Ice Cream
Blueberry Ice Cream
Ingredients
- 1 can coconut milk chilled overnight
- 3 cups blueberries frozen
- powdered sugar to taste
Instructions
- Combine blueberries and coconut milk in a bowl and blitz in a food processor or with an immersion blender until you reach desired consistency.
- Add sugar and continue to blend, to taste.
- Serve immediately, or freeze until set to desired consistency (not longer than 3 hours for best results).
