Butterscotch Ganache Recipe Ingredients
- Butterscotch chips
- Heavy whipping cream
- Optional: pinch of salt
How do you make butterscotch ganache?
⭐ First, heat heavy cream to a light simmer. This can be done in a microwave or on the stovetop.
⭐ Next, add butterscotch chips and salt, whisk or blend until smooth. An electric mixer or stick blender works really well for this, but you can use good old fashioned elbow grease as well.
⭐ Finally, use immediately, or allow to set overnight for a thicker consistency.
When to use butterscotch ganache
Butterscotch ganache is delicious on it’s own or over your favorite sweets. I’m especially partial to it over pumpkin ice cream, or poured onto an easy apple bundt cake. Try it stirred into your morning coffee, or drizzled on a frozen pumpkin spice latte.

Can you believe this ganache is only two ingredients? True story. Well, three if you include the salt as an ingredient. But I don’t think you do. At least I don’t. I always think of Harry Potter when I make butterscotch recipes. I think Harry would be proud of this one.

- Stick blender – Possibly the most used gadget in my entire kitchen. The key to making a hand blender useful versus a giant pain in the butt is to rinse it immediately after using. That way you’re never trying to get crusty dried goop out from under the blades.
- Electric mixer – I love love love love love (x’s 100) my stand mixer. Really and truly. But my daily work horse is this handheld electric mixer. It even comes in allll the colors. Which, yay!

Butterscotch Ganache Recipe
Ingredients
- 12 ounces butterscotch chips
- 1 cup heavy whipping cream
- optional: pinch of salt
Instructions
- Heat heavy cream to a light simmer (I like to do it in my microwave for 2 - 3 minutes).
- Add butterscotch chips and salt, whisk or blend until smooth. I like to use an electric hand blender or stick blender to make quick work of this.
- Use immediately, or allow to set overnight for a thicker consistency.

I was inspired to make this yummy recipe after a recent visit to Ohio with the American Dairy Association Mideast. We toured a milk farm, a cheese factory, visited an ice cream churnery (I think I just made up that word), and had dinner with Ohio football great, Joe Thomas. It was an extraordindairy adventure! (see what I did there?).
Our visit to Claredale Farms was maybe my favorite thing ever. If you know me, you know I love cows. Like really really love cows. As in, the screen on my phone isn’t a picture of my kids, it’s a picture of a cow. So, I was both excited and nervous about visiting a dairy farm.
I was worried I wouldn’t want to drink milk or eat steak after touring a farm because I would feel bad for the way the cows are treated. Buy holy moly – these were the sweetest, happiest cows ever. I wish everyone could visit a dairy farm, I would have stayed all day if I could!
I was especially impressed by the way they’re able to demand feed the newborn calves, much in the same way the babies would eat if they were nursing off mama cow! Also, did you know, the milk you get at your local market takes about 24 hours (or less!) to get there from cow to shelf?!
How could I not be inspired to make a delicious creamy ganache after learning all of that? Okay, okay. I considered doing an ice cream recipe too – but you could totally put this butterscotch ganache over your ice cream!
You could totally whisk this together by hand, but my preference is to use a stick blender or electric mixer. It makes the ganache super smooth, super fast!
We also visited Miceli’s, a cheese factory in Ohio! (Yes, I know, I officially win the award for clumsiest segue ever.) Let’s just talk for a hot minute about how amazing a cheese factory smells. So. Amazing. I have to wonder if maybe that’s what heaven smells like. Mmmmmmm, warm fresh cheese. Yas.
After touring the factory, we had the privilege of being the first guests to Miceli’s who were allowed to make our own pizzas in their custom built Italian wood burning clay oven! There was a spread of everything you could dare to want on your pizza, including ohhhhh so many delicious cheese!
I went for a pesto pizza with fresh mozzarella, roasted garlic, red onion, and greek olives. Oh my. It was so good!
We also had the incredible opportunity to eat dinner with Joe Thomas of the Ohio Browns as part of the Fuel Up to Play 60 program. I’m a little embarrassed to admit, I didn’t know who Joe Thomas was, but my boys were quick to school me when I called and asked (“OH MY GOODNESS MOM, HE’S ONLY THE BEST FOOTBALL PLAYER EVERRRRRRR”).
Joe was incredibly nice, despite my not knowing a lick about football, and even Facetimed with my kids for a few minutes! What a perfect person to represent the Fuel up to Play 60 program!

Both the chocolate and the butterscotch ganache look wonderful. How long can I keep it and can you microwave it for ice cream?

Hi Pam! You can absolutely microwave it for ice cream, that’s one of my favorite applications. If you’re storing it in a microwave safe glass container, nuke it in 15 – 20 second increments, stirring in between. As for storage, a good rule of thumb is to never keep it longer than the ingredient with the shortest expiry date. So, in this case make note of when the heavy cream expires. That will be your use-by date for the ganache. 🙂

will this harden up enough over night to scoop and roll truffles? or do you need to adjust the chocolate for a more thicker consistency?

The butterscotch version tends to be on the softer side when it sets so I would probably lessen the amount of cream or increase the amount of butterscotch chips if using for truffles. Hope that helps!
