A few days ago I was in a baking mood and my three year old was in a chocolate cookie mood. Alas, we had no cocoa powder or chocolate chips! But what we did have was a box mix for chocolate cake. Here’s how it went down. (and yes, it was Oh So Goooood).
– 1 box chocolate cake mix
– 2 eggs
– 1 stick butter, softened
– 1/4 cup coconut flour (White or whole wheat would work fine too. You could even skip this ingredient if you want a cookie that spreads more)
– sprinkles (optional)
– Add all ingredients to a bowl and beat with electric mixer at increasing speeds for 1 -2 minutes, until batter is well blended.
– Spoon batter onto parchment lined cookie sheet with a teaspoon.
– Bake for 8 – 12 minutes.
Yields approximately 40 cookies.
