This silky delicious Creamy Butternut Squash Mac and Cheese is a sneaky sneaky devil of a dish. I fed it to my family for dinner and they had no idea it was filled with veggie goodness! My 7 year old declared it “Amazing!” – though, admittedly, the 8 year old was nonplussed that I chose fancy noodles rather than our normal elbows. Alas, being a kid is rough.
This recipe whips up in just a few minutes – by the time your noodles are al dente, the sauce is perfect and ready to go. It’s a great option for those days when you’re cramped for time. Or just don’t really want to spend the time, even if you have it.
We lollygagged outdoors for hours playing on the trampoline and swingset, because the weather is finally semi-bearable outdoors here. Dinner was a total afterthought, but thankfully still completely delicious – and bonus, I didn’t have to argue with the kids about finishing their vegetables!
Creamy Butternut Squash Mac and Cheese
Ingredients
- 1 cup chopped American cheese about 7 slices
- 1/2 tablespoon butter
- 3 ounces butternut squash puree about 1/3 cup
- 3 cups cooked noodles
Instructions
- In a large saucepan, melt cheese and butter together on medium/low heat.
- Stir in butternut squash and continue mixing until squash is fully incorporated and you get a smooth sauce.
- Add noodles and mix well.
- Enjoy!

I’m a really big fan of using baby food to hide extra veggies in my family’s food. The consistency is so incredibly smooth that it incorporates perfectly. Don’t get me wrong, we still usually have a vegetable side, this is just bonus veggies!
