Dinner was pan seared smoked sausage over brown rice with sauteed onions, mushrooms, garlic and green peppers. Served with wilted greens and a *dash* of soy sauce. Mmmmmm. After dinner snack was toasted salty pumpkin seeds! Check out the Jack-o-Lantern here!
The market was running a sale on thigh/leg quarters today. $.59/lb!!!! Plus I had a coupon for $1.00 off meat. Woot. Got 5 quarters for $2.50. I love a good sale. And, the lettuce was 1/2 off. Woot! Check out the rest of my super savings here. Baked chicken with teriyaki pineapple glaze, roasted potatoes and salad!
Breaded pork chops, roasted potatoes & steamed green beans. Can’t miss with this classic.
Polish turkey kielbasa with sauteed onions, whole wheat rotini & broccoli. A little on the salty side, but tasty nonetheless. And, *bonus* Casey ate it too!
EDIT: Apple butter recipe stolen from Tabitha. I used 15 large Red Delicious apples and pureed in my blender. It yielded 12 six ounce jars. Here’s her recipe: About 1 peck of apples (different varieties picked from the orchard) 3 cups sugar (I use organic cane sugar) 3 teaspoons cinnamon Pinch of salt After we peel, core and cut up…
Ok, maybe we watch too much Shrek in this house.

Ok, so I was feeling ambitious yesterday and I made a whole roasted chicken with brown rice and green beans in my clay cooker. After dinner I used the bones to make chicken stock and whipped up a tasty little Chicken Noodle Soup number in the crock-pot overnight. I have to say that I am quite pleased with my efforts!
Mmmmm…. I made these oversized tasty tasty cupcakes for Dani’s baby shower. Mmmmmm.
Ok, so I was (rightfully) called out by Ms. Montas-Coleman for not keeping this blog up to date. In my defense, though, we’ve been tight with our pennies lately, I’ve been slumming it at home (read = microwave meals) and the husband was not thrilled about my pulling out a camera at dinner to snap a photog of my food….
Sarku Japan is hands down, the best mall food ever. And not too shabby on the points either (Teriyaki Chicken with veggies only is approximately 7 points – 5 for the meat, 2 for the sauce, 0 for the steamed veggies). The only one I know of locally is at the Oviedo Marketplace mall.
Ok, the only thing that makes it a breakfast burrito is the fact that it was the first thing I ate this morning. I wouldn’t normally write about something so mundane as a burrito made with leftovers, but I’d like to give a shout out to the “tortilla”. I actually use flat bread instead of a tortilla. Specifically Flat Out…
I have to thank my good friend Elaine for introducing me to Vietnamese cuisine. When I was pregnant with my oldest son we had a girls afternoon out on a rainy day and Elaine insisted that we go for Pho soup. She called it the ultimate rainy day comfort food. Oh goodness, she couldn’t have imagined the obsession she was…

But for this very moment (and probably several, if not all, moments to come) it’s about food. I love food. I think about food constantly and even more so…
