Roasted Red Potato Ingredients
- Red Potatoes – You can use large or small potatoes. A fun variation are the multi-colored baby potatoes instead of just red skinned potatoes!
- Olive Oil – Extra Virgin Olive Oil will lend a nice flavor, but you could use a lighter olive oil as well.
- Garlic Salt – Because garlic and potatoes were made for each other.
- Onion Powder – And what would potatoes be with onion??
- Ground Pepper – Fresh ground is best!

Preparation
Are Red Potatoes Good For Roasting
Red Potatoes are good for roasting as they hold their shape well during cooking and have a creamy flavor. Red potatoes are also easy, as you can scrub them but do not have to peel them before cooking or eating.
Do You Have To Peel Red Potatoes Before Roasting
You do not have to peel red potatoes. Most of the potato’s nutrition is in it’s peel, so just scrub them and remove any eyes or sprouts before cooking.
Do Red Potatoes Taste The Same As Regular Potatoes
Red Potatoes do not taste the same as regular (white) potatoes in some dishes. Both are delicious when roasted, but red potatoes are too waxy to make a good mashed potato.
Where red potatoes shine is in a potato salad, as they tend to hold their shape really well once cooked and roasted as they get crispy on the outside and perfectly creamy on the inside.
Can I Cut Potatoes Ahead Of Time
You can cut potatoes ahead of time, but should place submerged in water to prevent browning. If you are going to soak for more than one hour, place in refrigerator.
Don’t soak them for more than a few hours or overnight, however, as they will start to lose both their structure and their flavor. This will make for a strange texture in your roasted red potatoes.
How Do I Make Roasted Potatoes Crispy
The trick to making these roasted red potatoes crispy is to make sure the roasting pan is well greased an you do not flip the potatoes. This will create a beautiful crisp side where the potato meets the pan. For ultra crispy potatoes you can try a few extra steps – first, soak the cut potatoes in cold water for a few minutes, then dry them completely with a clean, lint free kitchen towel.
Then preheat the oven with the roasting pan inside to get hot so the potatoes start to cook right away when added. Finally, be sure not to crowd the potatoes! Give them lots of room.
Nutrition
Are Red Potatoes Healthier Than Sweet Potatoes
Red potatoes are not necessarily healthier than sweet potatoes, as they are actually two different types of vegetables.
A medium red potato will have more calories and carbohydrates than a sweet potato, but also more protein. Which is “healthier” depends on your needs, as both vegetables are very healthy when part of a normal diet.
Are Red Potatoes Low Carb
Red potatoes are not low carb. Although lower in carbohydrates than their white potato cousins, they are still a significant source of healthy carbohydrates (usually around 25-30 grams in a medium red potato).
Are Red Potatoes Better For You
Red potatoes may be better for you, as most of the nutrients are found in the potato skin. As you eat the skin of the red potatoes, not only do you save time, but you may be increasing your nutrition as well!
Potatoes are high in carbohydrates and fiber, as well as B vitamins, iron, and potassium. Potatoes are also high in resistant starch, which acts as a prebiotic (in other words, food for your gut bacteria, leading to a healthier gut!)
Are Red Potatoes OK For Diabetics
Red potatoes may not be ok for many diabetics, as they have a high glycemic index, which measures how quickly a food will raise blood sugar.
However, potatoes do offer great nutrition and may be something a diabetic can eat, depending on the body’s response. Diabetic patients should discuss specific dietary needs with their doctor or nutritionist.
Are Red Potatoes Gluten Free
Red potatoes are gluten free in and of themselves. Often, however, potatoes are combined in recipes which may contain gluten so if you are gluten sensitive or celiac you should always check with the kitchen.
This recipe for roasted red potatoes is gluten free.

I love roasted potatoes, especially roasted red potatoes! I have a general question for you, though. What is a kcal and how does it differ from a regular calorie? I had never heard of kcals until this last couple of years, so I’ve been very curious about this term. Thanks for any enlightenment you can ring me on this.
By the way, you are looking great!
Best wishes,
Sharon McMasters
