I feel like grownupping is about a billion times harder than I ever imagined it would be. Remember thinking as a kid that adults had it so easy because they could do whatever they wanted? HA! Hahahahaha. Seriously, though. To be a kid again.
The thing with this website – my main goal in life right now, is to tell you you’re not alone in this and help you get through the day maybe a pinch easier. Hopefully a lot easier, but I’m trying to keep it real here. I’m no Oprah. But at the end of the day, if I can equip you with an easy dinner idea and maybe a little humor (feel free to laugh at my expense), then I’ve done okay.
Getting a healthy dinner on the table at a reasonable hour is a huge struggle in our house. (We totally had Chinese food tonight). With 5 kids and a mismatched schedule, it seems that no amount of planning gets it exactly right, but over the years we’ve continued to get better and find hacks that work for us – and hopefully you!
One thing I love to do is pair a quick or ready made dish with a healthy homemade side. For this meal we did a One Skillet Three Cheese Chicken Carbonara that I picked up at Publix and paired it with a delicious Spinach and Pear Salad with Balsamic Dijon Dressing. All in all the whole meal took about twenty minutes to get on the table and the whole family really loved it. In fact, my nine year old hovered over me the entire time I was taking pictures, just waiting to grab the plated dish!
The Carbonara was incredibly easy to make. I just added the pre-cut chicken to a hot skillet until it was browned. Then we stirred in the pasta until heated, and finally added the sauce. I set it aside while the salad came together and we were able to sit down and eat in less than half an hour. My kids devoured the chicken and pasta without a single grumble. Which, if you have kids, you know almost never happens.
Spinach & Pear Salad
Ingredients
- Baby spinach leaves
- Pears sliced
- Slivered almonds
- Red onion thin sliced
- Goat cheese crumbled
- optional: Balsamic Dijon Dressing
Instructions
- Toss everything together in a bowl and serve. (Told you it was simple).
- ENJOY!

My nine year old, Casey, was a total Creeper. I think that’s a character from Minecraft – which he and his brothers talk about r-e-l-e-n-t-l-e-s-s-l-y. And yet about which I still am unable to retain anything. But I think Creepers are the guys that creep about looking for stuff. Which is exactly what Casey was doing. The stuff of course being our pasta and salad dinner. Okay, he was mostly interested in the pasta.
