We all know I’m not much of a baker, it’s just not in my blood. Or maybe I don’t have time. Or maybe I am an amazing pastry chef, but the talent lies hidden and undiscovered! Hah! Well, regardless – baking from scratch almost never happens around here. But I still love to make unique goodies for friends and family, so one of my favorite things to do is cheer up a box cake mix. They make the perfect base (no weighing or measuring!) and you can do so much with a little ingenuity!
This weekend for our holiday gifts, we put together these yummy White Chocolate and Peppermint Cupcakes. In the past I’ve always just slopped some icing on top and called it a day, but I recently got a pack of icing tips and have been experimenting with making my cupcakes look a little more professional. They’re far from perfect, but I just love how these came out. And they were a total hit! Yay!

White Chocolate and Peppermint Cupcakes
Ingredients
- 1 package white cake mix batter prepared (I used Pillsbury™ Funfetti® Holiday Cake Mix)
- 1/2 cup white chocolate chips
- 1/2 cup white peppermint candies I used M&M's® White Peppermint
- White icing
- optional: crushed hard peppermint candies
Instructions
- Add white chocolate chips and peppermint candies to prepared cake batter and mix well.
- Pour batter into lined cupcake tray, filling each well 1/2 - 3/4 full.
- Bake 350 degrees on center rack for 18 - 21 minutes, until a toothpick comes out clean.
- Allow to cool completely, then decorate with frosting and peppermint candies.
- Enjoy!
