Ingredients

pounds
red potatoes
diced
1
small/medium sweet yellow onion
small chopped
4
cloves
garlic
minced
1
pound
cooked ham
small chopped (I used Hormel Cure 81 Ham)
olive oil
salt and pepper

Instructions
Place potatoes, onion, garlic and ham in an oven-safe/broiler-safe covered dish.
Drizzle lightly with olive oil and sprinkle with salt and pepper. Toss to coat evenly.
Cover and bake on the middle rack at 425 degrees for 30 minutes. Uncover and turn on broiler for 3-5 minutes, until potatoes are browning.
Crack eggs over potatoes and return to broiler for an additional 2-3 minutes, until eggs are cooked to your liking.
