Prep the interior of your slow cooker with pan release. Line the interior of the crock with two overlapping sheets of parchment paper. Trim to fit inside the pot.
In a large bowl, beat both sugars and butter until light and fluffy. Add in the egg and vanilla extract and continue mixing. Add in flour, baking soda and salt and mix again until fully combined. Fold chocolate chips (or other mix-ins) into the dough.
Press cookie dough into prepped slow cooker, flattening the top with the back of a spoon. Sprinkle additional chocolate chips over top.
Cover and cook on high for 2½ hours or low for 5 hours (or until cookie is baked through to your liking).
