Instructions
In a large bowl, using an electric mixer cream together the butter and both sugars until fluffy. Beat in the egg, vanilla and blue food coloring, until desired shade is reached.
Add in the flour, baking powder and salt. Mix until just combined. Stir in half of the white chocolate chips, half of the mini Oreos, and half of the mini chocolate chips. Break up the cookies a bit while mixing.
Divide the dough into 6 equal balls and place on a lined/prepped baking sheet.
Break up the remaining mini Oreos and mini chocolate chip cookies. Press the remaining white chocolate chips, mini Oreos and mini chocolate chips cookies into the tops of the dough balls. Chill for at least 30 minutes.
Bake the cookies on the center rack in a 350℉ oven for 15-18 minutes, just until the edges are turning golden brown. Make sure not to overcook, we want the cookies to stay chewy!
Allow to cool for about five minutes on the baking sheet, then transfer to a wire rack to cool completely.
