Choose a plantain that is very (very very) ripe. Like, more black than yellow. Place unpeeled plantain on a sheet of foil.
Roast at 375 degrees for about 25 to 35 minutes, until plantain has burst from the peel.
Remove remainder of peel, slice, and sprinkle with salt.
