In a large skillet brown ground beef. If desired, drain off excess fat.
Add tomatoes, taco seasoning, and onion to skillet and bring to a simmer. Continue stirring and simmering until most of the liquid has cooked away.
While meat is cooking, stand taco shells upright in a baking dish. (I’s okay if they’re not perfect).
Evenly divide meat mixture into taco shells, top with cheese, and bake at 350 F for 10 - 15 minutes, until cheese is melted and shells are browned and crisping.
Top with lettuce and optional garnishes.
