Instructions
In a large pot over medium heat, melt the butter. Whisk in the flour and cook, whisking constantly, for about 1 minute.
Slowly whisk in the chicken broth until smooth and bring to a gentle simmer. Add the mashed potatoes and stir until fully incorporated into the broth.
Simmer for 10 to 20 minutes, stirring occasionally, until the soup thickens slightly. Stir in 1 to 2 cups of heavy cream until heated through.
