This easy slow cooker honey mustard chicken is sweet, tangy, and incredibly tender. Made with simple pantry ingredients, it’s a set-it-and-forget-it dinner that’s perfect over rice or potatoes.
2poundsboneless skinless chicken thighs or breasts
1teaspoonsalt
½teaspoonblack pepper
½teaspoongarlic powder
½cuphoney
½cupyellow mustard
2tablespoonsDijon mustard
1tablespoonapple cider vinegar
1teaspooncornstarch
Instructions
Place the chicken into the slow cooker and season with salt, black pepper, and garlic powder.
In a bowl, whisk together the honey, yellow mustard, Dijon mustard, apple cider vinegar, and cornstarch until smooth.
Pour the honey mustard mixture over the chicken, making sure the chicken is fully coated, including underneath.
Cover and cook on low for 4–5 hours, until the chicken is tender and cooked through.
Turn off the slow cooker and shred the chicken (I like to use an electric hand mixer on slow to easily shred the chicken). Stir to coat the chicken in the sauce.
Allow the chicken to sit, uncovered, for 5–10 minutes to allow the sauce to thicken before serving.

Dijon mustard adds a deeper flavor—don’t skip if possible.
Letting the chicken rest in the sauce after shredding helps it thicken naturally.
If sauce is too thin, cook uncovered for an additional 10–15 minutes.
Great served over rice, mashed potatoes, or roasted vegetables.
