Ingredients

pound
breakfast pork sausage
(usually found near the bacon)
1
medium/small sweet yellow onion
diced
4 - 6
cloves
garlic
minced
1
large sweet potato
diced
optional garnish: chives
hot sauce, fried egg
Instructions
Brown pork sausage in a large pan or skillet (I love my cast iron for this recipe!), drain excess oil and return to pan.
Add diced onion and garlic. Cook on medium/low heat until garlic is fragrant and onions are becoming translucent.
Stir in diced sweet potato and cook covered for 5 - 10 minutes, until potato is fork tender.

Recipe Notes:
Sausage:
A one pound tube of ground pork sausage works best. Use mild for a kid friendly version or hot sausage for more spice.
Make it spicy:
Finish with a smattering of sriracha or your favorite hot sauce.
Add-ins:
Stir in a diced apple with the sweet potato, or wilt in a few handfuls of spinach or kale at the end.
Less sweet:
Swap the sweet onion for white onion to balance the sweetness.
Storage:
Refrigerate up to 4 days in an airtight container.
Freezer:
Portion and freeze up to 3 months. Reheats well in a skillet or microwave, even straight from frozen.
Serving:
