In a medium sized microwave safe bowl, heat butter in the microwave on high power in 30 second increments, until fully melted. Add paprika, Italian seasoning, salt, and pepper. Whisk to combine.
Spread seasoned butter evenly into a 9x13" baking dish. Top with parmesan cheese, then place potatoes into dish in a single layer, cut side down. Use a basting brush to brush a little bit of the seasoned butter from the dish over the top of the potatoes.
Bake uncovered in a 425℉ preheated oven for 35 minutes. Remove from oven and allow potatoes to rest 5 - 10 minutes.
Garnish with additional grated parmesan and fresh parsley.
