Roasted bone marrow is one of those things you would probably never think to eat, but then when you do finally eat it you’re all HOLY CROW WHY HAVE I NEVER HAD THIS BEFORE??? It’s like the roasted garlic of the meat world. For serious. I mean, Anthony Bourdain has declared it part of his death row meal. And we all know Anthony Bourdain doesn’t screw around.
And rest assured, despite tasting and looking downright sinful, it’s actually pretty darn good for you.
p.s. This probably isn’t a good first date meal. You will want to lick and slurp at the bones.
p.p.s. Don’t you dare toss those bones in the trash! Throw them in your freezer until you’ve collected enough for a bone stock! Or at the very least, toss ’em to your pup.
Roasted Bone Marrow
Ingredients
- Beef Bones cut (I find them at the local grocer right next to the steaks)
- Your favorite seasoning I have been using Aunt Cora's Soulful Seasoning or McCormick Sweet and Smoky Rub - or you could even just use some coarse salt!
Instructions
- Place bones on a foil lined baking sheet and sprinkle with your preferred seasoning. Roast at 450 degrees for approximately 12 - 15 minutes (until marrow is soft, but not melted).
- Enjoy as is, spread over a toasted baguette, or on top of a seared steak!

Another recipe I looked at had you soak bones in salt water to remove blood. Is this step not needed or not recommended?
