I don’t know a single adult who hasn’t been personally touched by breast cancer. Several of the women who I hold dear in my life have been afflicted, including my close personal friend and fellow food blogger, Elaine. So when Rebecca asked food writers to take part in her Cooking for a Cure campaign, I didn’t hesitate. I put together this fun PINK (and yummy!) recipe and am also making a donation in honor of my friends and your friends who have or may some day deal with this awful disease.
I would love if you joined me in making a few pink recipes and a small (or not small) donation. If breast cancer isn’t the cause that hits you in the feels, then choose one that does. If you can’t afford to make a donation right now, then pick up the phone and call a friend who could use an ear. Let this post inspire you at least briefly to make a difference in someone’s day. Strawberry Meringues for Breast Cancer Awareness
Ingredients
- 4 egg whites
- 1 cup powdered sugar
- 1/2 teaspoon cream of tartar
- 1 teaspoon strawberry flavor extract
- optional: food coloring
Instructions
- With an electric mixer, whip the egg whites into stiff peaks.
- Add powdered sugar, cream of tartar, strawberry extract, and food coloring. Continue whipping until everything's incorporated and stiff peaks are forming.
- Place small dollops of meringue cream onto a parchment lined baking sheet (or use a piping bag to make shapes and designs - I made little breast cancer awareness ribbons).
- Bake at 225 for 30 - 40 minutes, until meringues feel dry to the touch. Watch closely toward the end and do not let them brown.
- Remove from oven and allow to cool. Store in a dry, air tight container.
- Enjoy!
