Avocado Pasta

Avocado Pasta is rich without feeling heavy, fresh without tasting like you’re gnawing on the lawn, and rich enough that you’ll swear there’s actual cream involved. But nope. Just avocados doing their magical avocado thing.

Avocado Pasta Recipe
The first time I made this, I wasn’t sure what to expect. I love avocado on toast, in tacos, on salads but had never tried it on pasta. Turns out it’s fantastic. The basil, parmesan, garlic, lemon, and avocado all blend together into a super smooth sauce that tastes fresh and satisfying.

Why You’ll Love This Avocado Pasta
This is one of those recipes that’s easy enough for a busy weeknight but still feels a little fancy. The avocado sauce is silky smooth, packed with flavor, and comes together in minutes with just a blender or food processor.
It’s also super filling thanks to the healthy fats in the avocado, and you can easily customize it with grilled chicken, shrimp, cherry tomatoes, or extra parmesan if you’re feeling extra.

Ingredients You’ll Need
- Pasta
- Avocados
- Fresh basil leaves
- Garlic
- Grated parmesan cheese
- Olive oil
- Lemon juice
- Salt and pepper
I used angel hair pasta, but any pasta shape will work here. Spaghetti, linguine, fettuccine, even penne would all be delicious. You could also try it with our microwaved spaghetti squash or zucchini noodles!
Step By Step Directions
Cook the pasta according to the package directions until al dente. Before draining, reserve about half a cup of the pasta water.
While the pasta cooks, make the sauce. Add the avocados, basil, garlic, parmesan cheese, olive oil, lemon juice, salt, and pepper to a blender or food processor. Blend until smooth and creamy.
Slowly drizzle in some of the reserved pasta water until the sauce loosens up into a thick but pourable consistency. You want it creamy enough to coat the noodles without feeling gluey.
Add the hot pasta back to the pot or a large serving bowl, pour the avocado sauce over the top, and toss everything together until evenly coated.

Tips & Tricks
- Use ripe avocados for the smoothest, creamiest sauce. If they’re underripe, the sauce can turn out a little chunky and bland.
- Don’t skip the pasta water. That starchy water helps the sauce cling to the noodles and gives it a silky texture.
- This pasta is best served right away. Avocado naturally darkens as it sits, so leftovers aren’t quite as pretty the next day. Still tasty though.
- If you want extra protein, grilled chicken or shrimp would be amazing mixed in.

Storage
Store leftovers in an airtight container in the refrigerator for up to 1 day. Because of the avocado, the sauce may darken slightly, but the lemon juice helps slow that down.
I don’t recommend freezing this one.

Frequently asked questions
Angel hair, spaghetti, linguine, and fettuccine all work great. Short pasta shapes like penne or rotini are delicious too.
This recipe is best served fresh since avocado can brown as it sits. If needed, you can make the sauce a few hours ahead and store it tightly covered in the refrigerator.
The lemon juice helps slow browning, but this dish is definitely freshest right after making it.
Absolutely. Grilled chicken, shrimp, or even crispy bacon would pair really well with the creamy avocado sauce.
It’s best served warm immediately after tossing with the hot pasta.
