No Bake Cinnamon Raisin Cashew Bites RecipeSo, I’m just gonna say upfront – make a triple batch.  Seriously, they will not last.  A small bowl of these No Bake Cinnamon Raisin Cashew Bites (which, by the way taste SO much like oatmeal cookies) and a steaming cup of tea has become my absolute favorite afternoon recharge.  You know – that three minutes when you hide from the kids in the back of your closet behind the coats with something you don’t want to share?  Yes, that.

They take no time at all to make and are practically guilt free since there’s no added sugar.  They’re also amazingly grain and dairy free as well, but still manage to taste like oatmeal raisin cookies.  No, I don’t understand the witch craftery of it all, I’m just enjoying the results.  And my three minutes of solitude.

When the mixture starts to clump together a bit in the food processor it’s done.  It won’t form a true dough, but the raisins and cashew will mash up enough to hold everything together.  You should be able to roll them without difficulty.  If they crumble, you need to process a bit more.

I like coffee in the morning, but prefer tea for the afternoon.  Especially a really aromatic herbal blend. There’s just something super relaxing about a cup of hot tea – even with kids screaming in the background, I feel lightened a bit and ready to tackle them.  Errr, I mean tackle the rest of the day.

Ingredients
 

  • 1 cup cashews (I prefer salted)
  • 1 cup raisins
  • 1 tspn cinnamon

Instructions

  • Add all ingredients to food processor and pulse until they start to clump a bit and stick together.
  • Roll into balls
  • Enjoy!
  • I make about 12 and store in an airtight container (I like to keep mine in the fridge or freezer, but this is just a preference!).
