– one box vanilla cake mix
– one can pumpkin (15 oz)
– one egg
– 1/4 tsp ground ginger
– 1/2 tsp ground nutmeg
– Preheat oven to 350 degrees
– Combine all ingredients in a large bowl and mix thoroughly (I used a hand held electric mixer for about 60 seconds)
– Pour batter into a lightly greased (I used olive oil) 9″ round baking pan.
– Bake approximately 40 minutes. Check for doneness with a (very long) toothpick.
– Allow to cool for ten minutes before removing from pan.
