Our go-to Halloween night dinner is chili and cornbread, but I’m loving the idea of serving these sinister looking potatoes with a side of dark meat chicken.  My kids took turns guessing what they were before I finally revealed that they were potatoes!

And bonus, the purple potatoes are full of antioxidants.  That’s part of what gives them the deep color.

Roasted Purple Potatoes and Carrots

Garlic Roasted Purple Potatoes and Carrots are the perfect addition to your dinner plate. My kids thought these were fun, creepy, and delicious!

Ingredients
 

  • Cooked Perfect Fire Grilled Chicken choose dark meat for a spooky Halloween meal
  • Purple potatoes 2 pounds
  • Carrots 2 pounds (we used baby carrots so I didn't have to peel or cut)
  • 1/4 stick butter melted
  • Garlic salt and pepper to taste

Instructions

  • Prepare chicken according to package directions.
  • Half potatoes (or quarter if they're on the larger size), then toss into a bowl with carrots.
  • Drizzle butter over top and stir to coat. Spread in a single layer on a baking sheet.
  • Sprinkle generously with garlic salt, and less generously with pepper.
  • Roast at 425 degrees for 15 minutes. Toss and roast an additional 15 minutes until vegetables are fork tender and starting to caramelize.
  • Serve alongside Cooked Perfect Fire Grilled Chicken and enjoy!
