Ingredients Needed
- Large flour tortillas
- Ground beef
- Yellow onion, diced
- Taco seasoning or fajita seasoning
- Canned black beans, drained and rinsed
- Salsa
- Fiesta blend shredded cheese, divided
- Green onions, sliced

How It Comes Together
You’ll start by browning ground beef with onion until everything is nice and flavorful. Taco seasoning gives it that classic, crave-worthy taste, while black beans and salsa add texture and moisture so the filling doesn’t dry out in the oven.
The tortillas are layered and folded right in the sheet pan to create a giant quesadilla situation—crispy on the outside, cheesy and packed with flavor on the inside. A second baking sheet on top helps everything bake evenly and keeps the tortillas in place. Once it comes out of the oven, let it rest for a few minutes before slicing so the layers hold together perfectly.

- Cook the filling. Brown the ground beef with the diced onion in a large skillet over medium heat. Drain any excess grease.
- Season and simmer. Stir in the taco seasoning with a little water and cook until thickened. Add the black beans and salsa, stirring until everything is well combined.
- Prepare the pan. Lightly grease a large baking sheet. Arrange tortillas around the edges so half of each tortilla hangs over the side. Use tortillas to cover the center.
- Layer the quesadillas. Sprinkle shredded cheese over the tortillas. Spread the beef mixture evenly on top, then add the remaining cheese and sprinkle with green onions.
- Fold and secure. Place tortillas over the center filling, then fold the overhanging tortillas toward the middle to fully cover the filling. Place a second baking sheet on top to hold everything in place.
- Bake until crispy. Bake until golden and crispy (remove the top sheet after about half way done).
- Rest and slice. Let the quesadillas rest before cutting and serving.

How to Make Sheet Pan Quesadillas

Ingredients
- 8 – 10 large flour tortillas
- 2 pounds ground beef
- 1 medium yellow onion diced
- 2 packets taco seasoning or fajita seasoning
- 1 can black beans drained and rinsed
- ½ cup salsa
- 2 cups fiesta blend shredded cheese
- 4 green onions diced
Instructions
- In a large skillet, brown the ground beef with the onions. Drain any excess grease.
- Stir in the taco/fajita seasoning with a little bit of water, and cook until the liquid has evaporated. Add the black beans and the salsa, and stir to combine.
- Arrange 6 tortillas around the edge of a large lightly greased (or parchment lined) baking sheet so that half of the tortillas are hanging off the side. Place one or two tortillas in the middle to cover any gaps.
- Sprinkle one cup of the shredded cheese evenly over the tortillas, followed by the ground beef mixture, then the remaining cup of cheese and then sprinkle the sliced green onions over the top.
- Place one or two tortillas over the top of the filling, then fold the tortillas that are hanging over the side of the pan toward the center, making sure that there are no gaps. Place a second baking sheet on top to keep the tortillas in place while it bakes.
- Bake in a 425℉ oven for 20 minutes. Remove the top baking sheet, and bake another 10 to 15 minutes, until the tortillas are lightly browned and crispy. Let rest 10 to 15 minutes before cutting.
Notes
- Let the quesadillas rest before slicing so the layers stay together.
- Using a second baking sheet on top helps the tortillas bake evenly and get crispy.
- Swap ground beef for ground turkey or shredded chicken if desired.
- Serve with sour cream, guacamole, pico de gallo, or extra salsa on the side.
- Leftovers reheat well in the oven or air fryer for best texture.
