Creamy Butternut Squash Mac & CheeseThis silky delicious Creamy Butternut Squash Mac and Cheese is a sneaky sneaky devil of a dish.  I fed it to my family for dinner and they had no idea it was filled with veggie goodness!  My 7 year old declared it “Amazing!” – though, admittedly, the 8 year old was nonplussed that I chose fancy noodles rather than our normal elbows.  Alas, being a kid is rough.

This recipe whips up in just a few minutes – by the time your noodles are al dente, the sauce is perfect and ready to go.  It’s a great option for those days when you’re cramped for time.  Or just don’t really want to spend the time, even if you have it.

We lollygagged outdoors for hours playing on the trampoline and swingset, because the weather is finally semi-bearable outdoors here.  Dinner was a total afterthought, but thankfully still completely delicious – and bonus, I didn’t have to argue with the kids about finishing their vegetables!

I’m a really big fan of using baby food to hide extra veggies in my family’s food.  The consistency is so incredibly smooth that it incorporates perfectly.  Don’t get me wrong, we still usually have a vegetable side, this is just bonus veggies!

For my Creamy Butternut Squash Mac and Cheese recipe, I picked up Sprout® Organic brand butternut squash from the baby food aisle at Publix.

I’m a big fan of Sprout® Organic because it is USDA certified organic, non GMO, has honest flavor names that match ingredient lists, and is the only baby/toddler food brand that doesn’t use acid preservatives (e.g. citric acid, ascorbic acid or lemon juice concentrate) which can upset baby’s system and the only baby/toddler food with no additives, fillers or flavors in any of its recipes.  It also comes in BPA Free packaging.

You can find Sprout® Organic on Twitter at: @SproutFoods – and if you tweet at them, make sure to use the hashtag #SproutFoods or #SproutBabyFoods!
