Soup life, baby. SOUP LIFE. I could eat soup every single day and never get tired of it. In fact, I do enjoy a bowl several times a week so it wouldn’t even be a stretch. (Yes, even in summer). I know a lot of folks who are scared of making soup, but seriously it couldn’t be easier. Think of a few flavors that taste good together, throw them in a pot and stir. The great thing about preparing soup is that you can totally tweak it as you go. Not like baking where you throw it in the oven and say a prayer. Baking is terrifying. Not soup.
This Creamy Tomato and Blue Cheese Soup recipe was born of a quest for salad. Sounds weird, I know. But I was working late one night and had a hardcore hankering for some tomato and blue cheese salad with balsamic reduction. It’s one of my favorite quickie dinners, but sadly we were out of tomatoes. I did find a jar of spaghetti sauce in the cabinet though and genius struck!
This soup is really delicious and decadent tasting. The sweetness of the tomatoes next to the tang of blue cheese – YUM. The key is to buy a really good quality sauce. If your sauce doesn’t have balsamic in it already, you can finish your soup off with a drizzle of balsamic reduction.
Creamy Tomato and Blue Cheese Soup, Ingredients:
- 24 ounces (3 cups) really good spaghetti sauce
- 1 cup chicken stock (can sub vegetable stock)
- 1/4 cup heavy cream
- 1/2 – 3/4 cups loosely packed blue cheese crumbles
- optional: balsamic reduction, to taste
Creamy Tomato and Blue Cheese Soup, Directions:
- Bring sauce and stock to a simmer on the stove top.
- Stir in heavy cream and blue cheese, continue cooking until soup is heated through. Do not boil.
- Garnish with extra blue cheese crumbles and a drizzle of balsamic reduction.
