Crock Pot Minestrone Soup is a delicious Italian vegetable noodle soup that is super yummy and so easy to make!

When I told the kids I was making crock pot minestrone soup in the slow cooker, they were all “uhhhhhhhggg” “what is that????” and “grossss, mom!” — but when they smelled it cooking oh boy was that a quick change of pace!

Our family gobbled up the soup so fast, I was in awe.  Also, super excited because there’s not too many recipe that every single one of us loves!

MINESTRONE SOUP CROCK POT

Minestrone soup is so easy to make in the crock pot.  Chop up a few veggies, add some beans, pour in your choice of College Inn broth and let her rip.  It’s super versatile too – feel free to play with the ingredients, this recipe is perfect for using up vegetables before they go bad.

We like to use small noodles like elbow or ditalini, but you could also add rice or or even skip the grains altogether and add a protein like chicken or beef.

Our Crock Pot Minestrone Soup recipe is made with tomatoes, green beans, potatoes, spinach, carrots, and zucchini.  We suggest finishing with some good parmesan cheese, and serving with a salad and fresh bread.

We used College Inn® Garden Vegetable broth rather than water for the soup base.  Vegetable broth (or chicken, or beef broth!) is a great way to impart extra flavor to your dish.

Crock Pot Minestrone Soup is the perfect hearty vegetarian soup recipe! 

Ingredients
 

  • olive oil optional
  • 1/2 cup sweet yellow onion minced
  • 4 large garlic cloves minced
  • 2 cups zucchini small chopped
  • 2 cups russet potato small chopped
  • 1/2 cup small chopped carrots
  • 1 cup kernel corn
  • 1 cup green beans
  • 1 can great northern beans
  • 8 cups vegetable stock
  • 2 cups canned diced tomatoes
  • 1 1/2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Italian seasoning
  • 1/2 pound ditalini pasta
  • 4 cups baby spinach

Instructions

  • If you have a slow cooker that allows you to saute, go ahead and saute onion and garlic until fragrant and translucent.  If your slow cooker doesn't have this feature, then you can do it on the stove top or skip the step entirely.
  • Add everything except pasta and ditalini to the slow cooker.
  • Cook on high 4 - 6 hours, or low 8 - 10 hours.
  • Stir in ditalini and spinach, cover for an additional 10 minutes, until pasta is al dente.
  • Enjoy!
