Sauteed Vegetable Ingredients
- Assorted vegetables – We used broccoli, carrots, bell peppers, and zucchini.
- Onion – Sweet yellow is my preference, but white or red will work too.
- Butter – Olive oil will work too if you’re avoiding butter or dairy. We also love to use clarified butter.
- Dried Italian seasoning
- Optional – Salt and pepper (to taste), parmesan cheese.
How do you saute veggies? (Step-by-step)
⭐ First, melt butter in large skillet over medium-high heat and cook vegetables, onion and Italian seasoning, stirring occasionally, until vegetables are crisp and tender.
⭐ Then, season with salt and pepper to taste.
⭐ Finally, spoon vegetables into a serving bowl, then top with remaining 1 tablespoon butter.
Preparation
Can you make sauteed vegetables ahead of time?
This recipe is best prepared immediately before serving. If you need to prep ahead, chop the vegetables up to a day in advance and then cook right before you’re ready to eat.
What can I use instead of butter?
If you prefer not to saute your vegetables in butter, olive oil is a great alternative. You could also use canola oil, vegetable oil, or ghee.
Storage and Leftovers
How long do sauteed vegetables last?
These will keep in the refrigerator for about three days in a sealed container. I do not suggest freezing the veggies unless absolutely necessary as it will make them soft and soggy.
How to reheat leftovers?
You can reheat on the stove top over medium heat, or in the microwave for 60 – 90 seconds per serving on high power.
What can you do with the leftovers?
Try stirring the leftovers into an omelet, or using them in our egg casserole recipe or broccoli cheese and potato casserole. They’d also be great on a slice of homemade pizza or added to your crack chicken dinner or Mississippi pot roast!
Tips and tricks
🟢 Change up the flavor by using taco seasoning, chili seasoning, or ranch dressing mix instead of the Italian seasoning.
🟢 Make it super quick with pre-chopped frozen vegetables.
🟢 Add some pre-cooked chicken, shredded pork, or pulled beef to make it a full meal.
