Pumpkin Cake.

This was an experiment inspired by Erin's pumpkin blondies, and it turned out FANTASTIC. This is a MUST TRY.
Ingredients:
- one box vanilla cake mix
- one can pumpkin (15 oz)
- one egg
- 1/4 tsp ground ginger
- 1/2 tsp ground nutmeg

Directions:

- Preheat oven to 350 degrees
- Combine all ingredients in a large bowl and mix thoroughly (I used a hand held electric mixer for about 60 seconds)
- Pour batter into a lightly greased (I used olive oil) 9" round baking pan.
- Bake approximately 40 minutes. Check for doneness with a (very long) toothpick.
- Allow to cool for ten minutes before removing from pan.
- ENJOY!
