I'm kind of on a 'Basics of Cooking' kick. My apologies to the seasoned chefs in the group, but as someone who taught themselves to cook, I think these things are worth talking about. Today's lesson? Hard boiled eggs. Mmmmm. Delicious on their own, but also fantastic integrated into other recipes.
Ingredients:
- Eggs
- Salt
- Water
- Ice
Directions:
- Bring a pot of salted water to a rolling boil.
- Very carefully add your eggs (I use a slotted spoon to lay them in gently). There should be enough water to cover your eggs.
- Lower the heat to a simmer and cook the eggs for approximately fifteen minutes.
- Carefully remove the eggs (I use the slotted spoon again) and place them in an ice water bath for about fifteen minutes to cool.
- Peel and enjoy!

sarah - the trick is low and slow. don't boil hard or the whites will become rubbery and the yolks will turn grey. blech.

I wrote a post on this very thing last year, too! SO many people wonder how to do it well. I actually put in the eggs while the water is still cold, and gradually warm it up as the water boils. I LOVE egg and olive salad!
Funny! My mother was telling me that she was going over to my 20 year olds sisters house yesterday to boil eggs. I think my mom needs to "let go" and just send this link! A day late, but I'm doing it...thanks for helping my sister grow up :p
