My husband doesn’t use dressing on his salads. Can we all just agree he is completely whack? I mean, what is that nonsense? For me, a dressing can make or break the salad. A good dressing is more than just something to keep the lettuce from being too dry – it can pull your ingredients together and add the finishing touch that makes the dish sing!

On the contrary, a bad salad dressing can fully ruin your meal. For me, there’s nothing worse than a sickly sweet dressing. You know the kind – with gobs and gobs of sugar that really could be put over ice cream and would probably taste better?
I’m a pretty firm believer that sugar belongs no where near my salad dressing. I’m not saying you can’t go a little sweet with a touch of honey (as we do here) or maple syrup, but white sugar crosses an imaginary line for me. Is there something you would never add to your dressing?
This Balsamic Dijon Salad Dressing whips up in about a minute and tastes fantastic. No funky ingredients and made from stuff you probably already have hanging out in your pantry. Works great on salads, but also as a marinade for chicken, steak, or fish! I paired this dressing with my Spinach and Pear Salad. Mmmmm.

Balsamic Dijon Salad Dressing Recipe
Ingredients
- 4 tablespoons olive oil
- 1 tablespoon stone ground mustard
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Add everything to a small bowl and whisk together with a fork. Alternatively, you could use an immersion blender if you like it emulsified.
- Enjoy!
