Spinach & Pear Salad with Three Cheese Chicken CarbonaraI feel like grownupping is about a billion times harder than I ever imagined it would be.  Remember thinking as a kid that adults had it so easy because they could do whatever they wanted?  HA! Hahahahaha.  Seriously, though.  To be a kid again.

The thing with this website – my main goal in life right now, is to tell you you’re not alone in this and help you get through the day maybe a pinch easier.  Hopefully a lot easier, but I’m trying to keep it real here.  I’m no Oprah.  But at the end of the day, if I can equip you with an easy dinner idea and maybe a little humor (feel free to laugh at my expense), then I’ve done okay.

Getting a healthy dinner on the table at a reasonable hour is a huge struggle in our house.  (We totally had Chinese food tonight).  With 5 kids and a mismatched schedule, it seems that no amount of planning gets it exactly right, but over the years we’ve continued to get better and find hacks that work for us – and hopefully you!
