Sheet Pan Meatloaf Ingredients

  • Meat – Ground beef is my preference in this recipe, but you can also use ground turkey (not breast only), ground chicken, or ground pork. 
  • Onion – Grated. 
  • Crackers – Ritz crackers. I know a lot of folks use bread crumbs, but trust me on this!
  • Egg – Whisked. 
  • Garlic – Minced garlic. 
  • Sauces – Ketchup, mustard, worcestershire sauce. 
  • Bouillon – Beef flavored. We prefer Better than Bouillon paste, but powdered or cubed will also work. 
  • Glaze – Ketchup, barbecue sauce, worcestershire sauce.
  • Vegetables – Baby potatoes, fresh green beans, olive oil, salt and pepper.

How do you make a sheetpan meatloaf dinner? (step-by-step directions)

First, in a large bowl combine the onion, crushed crackers, egg, garlic, ketchup, mustard, worcestershire sauce, and bouillon. Mix well. Add the ground beef and knead until fully incorporated. Press the meat mixture onto one third of your baking sheet.

Then, toss the potatoes with some olive oil and season with salt and pepper. Place them next to the meatloaf. Bake for about 20 minutes.

Next, while the meatloaf and potatoes are cooking, toss the green beans in olive oil and season with salt and pepper. In a separate bowl, combine the ingredients for the glaze. 

Finally, push the potatoes to the side, and add the green beans. Brush the glaze all over the top of the meatloaf. Return to the oven and continue cooking until the vegetables are tender and the meatloaf has reached a safe internal temp.

What vegetables for a sheet pan meatloaf dinner?

We used baby yellow potatoes and green beans, but the great thing about this meal is it’s totally customizable. Other great options include:

  • Sweet potatoes
  • Cauliflower
  • Broccoli
  • Carrots
  • Brussels sprouts
  • Asparagus

Can you make sheetpan meatloaf ahead of time?

This is really best when served right from the oven, but you could absolutely prep it the evening or morning before and then just pop it in the oven when you’re ready!

How can you tell when the meatloaf is done?

Meatloaf is done when it reaches an internal temperature of 160 degrees Fahrenheit.  Sometimes the inside of meatloaf will still be a little bit pink.  This can be due to other ingredients such as ketchup, or sulfites.

The best way to tell when your meatloaf is done is by using a meat thermometer.

Storage and leftovers

How long does leftover meatloaf last?

This will keep for 3 – 5 days when stored in the refrigerator. Keep leftovers in a sealed container in the refrigerator for best results. 

Can you freeze meatloaf?

Meatloaf can be frozen.  For the best outcome when freezing meatloaf, bake it in a disposable loaf pan, or with a parchment liner.  Allow the meatloaf to cool completely in the refrigerator, then wrap tightly and freeze.

Meatloaf will last several months in an upright freezer, or up to one year in a deep freezer or chest freezer. Alternatively, you can slice the meatloaf and freeze it in individual portions for easy lunch packing or quick dinners.

How to make meatloaf moist

You make meatloaf moist by using meat that isn’t too lean, adding moisture to the recipe via onions, ketchup, and egg, and by soaking your breadcrumbs or crackers in the wet ingredients before mixing them with the meat.

Why is my meatloaf crumbly

Crumbly meatloaf is general caused by one of three things, or a combination of all: not enough liquid, not enough bread, and/or the loaf wasn’t kneaded well enough.

If your meatloaf was dense and crumbly, it likely needed more liquid.  If it was loose and crumbly, it likely needed more bread (for binding), and to be better mixed (to make sure the ingredients are well incorporated with one another).

For more liquid, try adding milk (will add moisture but not flavor) or ketchup (will add some tomato flavor and sweetness) in tablespoon increments until you reach desired consistency.

For more bread, add additional crushed crackers or breadcrumbs in 1/4 cup increments until you reach your desired consistency.

Why did my meatloaf crack

This meatloaf may crack on you, but don’t be upset!  This recipe is a thinner version of our classic meatloaf recipe and as the fat and water cooks off, it may separate and crack a little bit since it’s spread out and not squished into a loaf pan.

This is totally normal and it will still taste great!

Why is my meatloaf dry

If your meatloaf is dry, you need to add more liquid before baking.  Try adding milk (will add moisture but not flavor) or ketchup (will add some tomato flavor and sweetness) in tablespoon increments until you reach desired consistency.

The loaf before baking should be wet, but not runny, and just moldable enough to hold its form.

Ingredients
 

MEATLOAF

  • 1 pound ground beef
  • ½ cup grated onion
  • 1 cup crushed Ritz crackers
  • 1 large egg whisked
  • 1 tablespoon minced garlic
  • ¼ cup ketchup
  • 1 ½ teaspoons stone ground mustard
  • 1 ½ teaspoons worcestershire sauce
  • ½ teaspoon beef bouillon

GLAZE

  • 2 tablespoons ketchup
  • 2 tablespoons barbecue sauce
  • 1 ½ teaspoons worcestershire sauce

VEGETABLES

  • 1 pound baby potatoes halved (or cut to bite size)
  • ½ pound green beans ends trimmed
  • olive oil
  • salt & pepper

Instructions

  • In a large bowl combine the onion, crushed crackers, egg, garlic, ketchup, mustard, worcestershire sauce, and bouillon. Mix well.
  • Add the ground beef and knead until fully incorporated. If mixture is too wet, knead in additional crushed crackers.
  • Press and shape the meatloaf mixture onto one third of a baking sheet.
  • Toss the potatoes with some olive oil and season with salt and pepper. Spread them on the remaining empty area of the baking sheet. Cook in a 425° F oven for 20 minutes.
  • While the meatloaf and potatoes are cooking, toss the green beans in olive oil and season with salt and pepper. In a separate bowl, whisk together the glaze ingredients.
  • After 20 minutes, remove the baking tray from the oven. Push the potatoes to the side, and add the green beans. Brush the glaze all over the top of the meatloaf.
  • Return the baking tray to the oven and cook for another 20 minutes, until the vegetables are tender and the meatloaf has reached an internal temperature of 160°F.

  5. If I’m doubling the recipe for my family of 6, do I need to bake it longer?

  6. I used the Rachael Ray meatloaf mix recipe (I used half a recipe) and made the potatoes. I used a quarter sheet pan. I really liked this method and half a recipe was just the right portion for use. I baked 20 minutes and after adding the sauce, I baked and additional 25 minutes.
