⭐ Next, roll the dough tightly and pinch the seam together. Cut roll into even slices, placing cookies onto a prepared baking sheet.
⭐ Then, bake until just turning golden brown on the edges. Allow to cool completely on a wire rack.

Watch closely because they will cook faster when baked flat in a single layer. Leave simple with just the cinnamon and sugar topping or ice them like we do when rolled!

Ingredients
- 2 refrigerated pie crusts
- 2 tablespoons salted butter melted
- white granulated sugar
- ground cinnamon
GLAZE
- ½ cup powdered sugar
- 1 to 2 tablespoons milk
Instructions
- Roll out the pie crusts on a lightly floured surface, so that they are fairly rectangular.
- Brush about 1 tablespoon of melted butter on each pie crust, then sprinkle a liberal amount of sugar and cinnamon on each of them.
- Roll up the dough as tightly as you can, and carefully pinch the seam together.
- Slice each roll in ½" slices (about 20 cookie slices).
- Place on a parchment paper or silpat lined baking sheet. These cookies do not spread very much, so they can be close together, but not touching.
- Bake at 350° F for about 15 minutes, until just turning golden on the tops and edges. Let cool for 5 minutes before removing to a wire rack.
- Whisk together the powdered sugar and milk until smooth and drizzle over the cookies.
