Classic Banana Split SundaeThis isn’t so much a recipe as it is a reminder that it’s okay to serve ice cream for dinner sometimes.  I mean, maybe not when you’re in the middle of a sugar-free challenge.  But when you’re done.  (We’ll wait for you, it’s cool!)

Breakfast for dinner is fantastic, who doesn’t love a stack of pancakes, pile of bacon, and cheesy eggs at any time of day – but ice cream for dinner is magical.  It’s one of those things your kids will remember as adults and (hopefully) do for their own kids every now and again.

So, when I was in a funky (read = not great) mood the other day, I thought introducing my kids to the Classic Banana Split Sundae, would be the perfect way to lighten things up.  And, oh hey.  It worked.

Ingredients
 

  • Bananas
  • Vanilla ice cream
  • Hot fudge topping
  • Whipped cream
  • Maraschino cherries

Instructions

  • Split the banana length-wise. (No, seriously, it's called a banana split for a reason!) And place it in the bottom of your bowl.
  • Pile on a few scoops of vanilla ice cream, then drizzle the hot fudge topping liberally.
  • Dollop on some whipped cream (I dare you to make it fresh!), and finish with a couple (dozen) maraschino cherries.
  • Enjoy!

The inspiration to make sundaes for dinner struck when I was trolling the aisles of Walmart looking for meal ideas and I happened upon a Smucker’s® endcap.  There it was in all its ice cream topping glory, practically singing hymns to me.

My mood lightened immediately, I mean telling your kids it’s ice cream for dinner?  Way better than trying to get them excited about spaghetti and meatballs!  And I may have grabbed a few extra Smucker’s® topping items for recipes down the road.  Hey, when inspiration hits, you’ve just got to run with it!
