Easy Cheesy Antipasto AppetizersWe do a ton of entertaining and our friends have really diverse tastes and dietary preferences, so I’m always looking for simple recipes that check all the boxes. This way we have a variety of options for folks who eat everything, and at least a few choices for those who aren’t able to indulge in certain foods. It’s no fun to visit someone’s home and feel like you need to brown bag your own snacks.

This Easy Cheesy Antipasto Appetizer is bright and fresh tasting with an awesome crunch from the cucumber and a little zing thanks to the spicy cheese! It’s a great option for the low carb, atkins, gluten-free, and paleo crowd. Or, the Italian crowd, my grandfather would love this! Or, hey – just folks who like to eat good food.
