Lemon Butter Steamed ArtichokesI was recently invited to Southern Exposure, a huge produce convention in Orlando, Florida.  Lemme tell ya, folks.  It was awesome.  I was asked to sit at a table with other bloggers and talk to the attendees about how we can work together and bring more fruits and veggies to people’s tables.

I was able to meet tons of people in the industry and get a real feel for how brands perceive bloggers (note: it was a very mixed bag!), also I spent the day with some of my favorite local food bloggers.  Annnnnnnd!!!  At the end of the day, we were sent home with some of the *most* fantastic produce.

One of my favorite scores was about a half dozen gorgeous artichokes.  I was looking forward to savoring them all on my own, but low and behold… turns out my 7 year old and 2 year old love them as well.  And who can get upset about kids digging healthy food?  Not this gal.

Normally I would fix these artichokes up with breadcrumbs and parmesan, but since I’m chowing down caveman style these days, I did a simple lemon butter drizzle.  And it was fabulous.  FAB. U. LOUS.

Lemon Butter Steamed Artichoke

Ingredients
 

  • Artichokes
  • Lemon juice
  • Butter or olive oil
  • Salt

Instructions

  • Cut the top off of your artichokes, and trim tips of the remaining leaves with scissors. (Careful, they're sharp!).  Also, cut off the stem so your artichoke sits flat.
  • Place artichoke(s) in a lidded microwave safe container and drizzle generously with butter (or oil) and lemon juice, making sure to get liquid all the way down to the base of the leaves.
  • Fill container with about one inch of water (err on the side of too much, if you run dry it will scorch the bottom of your artichoke) and sprinkle liberally with salt (I'm partial to freshly ground sea salt).
  • Microwave covered on high for ten minutes (or 12-14 for two artichokes).
  • Enjoy!!!
