Mini Strawberry Breakfast Rolls

I have one daughter and four sons. Four. Sons. So, even though I wasn’t really into girly stuff as a child, I am absolutely reveling in my daughter’s love of everything pink and princessy. The girl comes by it naturally, because she was born into a sea of testosterone.

Mini Strawberry Breakfast Roll Ingredients
- Crescent roll dough
- Strawberry preserves
- Icing ingredients (per crescent roll package):
- 1 tablespoon whole milk
- 1 tablespoons melted butter
- 1/8 teaspoon real vanilla extract
- 1 cup powdered sugar
Mini Strawberry Breakfast Roll, Directions
- Unroll crescent dough and smoosh the seams together.
- Spread a thin layer of strawberry preserves over the whole thing and roll up lengthwise (make it long and thin rather than short and fat).
- Wrap parchment of foil around it and toss (gently) into the freezer for at least 30 minutes.
- Slice into small circles and place on a parchment lined baking sheet.
- Cook at 375 degrees for 11 – 13 minutes.
- Drizzle with icing!
Vanilla Icing Directions
- Combine milk, butter, and vanilla in a bowl or small cup.
- Pour slowly into the sugar, stirring constantly until desired consistency is reached.
- ENJOY!
For Easter we usually go to my sister’s and have a big egg hunt with the cousins, but schedules are a mess this year so we’re on our own for the first time. I’m pretty bummed about that, so I’d be lying if I didn’t admit to being seriously excited when I was asked to hit Walmart and put together a Disney Princess Easter basket.
We’re conservative about gifting, and it was hard not to go overboard, but I think I nailed it. I also put together these super simple Mini Strawberry Breakfast Rolls to serve on Easter morning. They’re so dainty and cute – with just the right amount of sweet to top things off.
