Almond Joy Cookie Ingredients

  • Butter – Unsalted butter.
  • Sugar – Brown sugar and granulated white sugar.
  • Egg – Large.
  • Vanilla – Real vanilla extract.
  • Flour – All-purpose flour.
  • Cocoa – Unsweetened cocoa powder.
  • Leavening agent – Baking soda.
  • Salt – Kosher salt.
  • Topping – Shredded sweetened coconut, sweetened condensed milk, semisweet chocolate chips, lightly salted almonds.

How do you make almond joy cookies? (step-by-step directions)

First, preheat the oven and line a baking sheet with parchment paper and set aside. In a large bowl, beat butter, brown sugar, and white sugar together until light and fluffy.

Next, mix in the egg and the vanilla extract until combined. Mix in the flour, baking soda, cocoa powder and salt and mix until a dough forms. Chill dough.

Then, separate the dough into six balls and place them on the baking sheet. Bake cookies and remove from the oven. Let cookies cool on the baking sheet, then transfer to a cooling rack. Let cookies cool completely.

Last, mix the coconut and sweetened condensed milk in a medium bowl until well combined. Top the cooled cookies with the coconut mixture. Microwave the chocolate in intervals, stirring until smooth and melted. Spread chocolate on the cookies and place three almonds on top of each cookie.

Yes, make and bake the cookies a few days ahead or prep the dough in advance and keep it in the refrigerator or freezer until you are ready to bake them.

How many cookies does this recipe make?

Since this recipe is inspired by Crumbl cookie, we make six HUGE cookies. However, you can split the dough into smaller cookie dough balls and make more cookies. Make sure to shorten the cook time accordingly.

What kind of topping goes on the Almond Joy cookie?

The topping is what gives these the Almond Joy flavor! We add a layer of coconut and a layer of melted chocolate topped with 3 almonds. You’ll truly feel like you’re eating a giant Almond Joy!

How long do Almond Joy cookies last?

Store these in an airtight container at room temperature for up to 3 days or store in the refrigerator for up to 5 days.

Can you freeze Almond Joy cookies?

Yes! To freeze the baked cookies, allow them to cool completely then store in a freezer safe air-tight container for up to 3 months. Thaw overnight in the refrigerator.

To freeze the dough, form into balls, then place in a freezer safe airtight container and separate layers with parchment paper.

Tips and tricks

✅ Make sure not to overbake. In fact, these cookies should be just slightly under-baked so they stay soft and chewy on the inside.

✅ Bake on a lined baking sheet (with a silicone mat or parchment paper) or use a well greased cookie sheet (I prefer silpat!) to make sure the cookies don’t stick.

✅ Add some chocolate chunks or white chocolate chips to the dough for more flavor.

✅ We used regular unsweetened cocoa powder but you can also use dutch processed cocoa.

✅ We enjoyed the salty sweet flavors of adding the lightly salted almonds but you can also use unsalted almonds if you prefer.

Can I use salted butter instead of unsalted butter in this recipe?

While the recipe calls for unsalted butter, you can use salted butter if that’s what you have on hand. Just remember to skip any additional salt in the recipe to avoid making the cookies too salty.

Can I omit the almonds if I have a nut allergy or preference?

Certainly! If you have a nut allergy or simply prefer cookies without nuts, you can omit the almonds from the recipe. I guess we’ll have to call them Mounds cookies at that point!

These Almond Joy cookies are one of my favorite recipes to make for a bake sale or to enjoy with the kids. We like to serve them with homemade three musketeers, peanut butter cups, and chocolate chip pecan cookies.

Ingredients
 

COOKIES:

  • ½ cup butter unsalted
  • ¾ cup light brown sugar
  • 2 tablespoon white granulated sugar
  • 1 large egg
  • 2 teaspoon real vanilla extract
  • cups all purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

TOPPING:

  • cups shredded sweetened coconut
  • cup sweetened condensed milk
  • 6 ounces semi sweet chocolate chips
  • lightly salted almonds

Instructions

  • In a large bowl beat together the butter, brown sugar, and white sugar until light and fluffy. Add in the egg and vanilla extract and continue to mix until fully combined. Add baking soda, cocoa powder, and salt and mix until a dough forms. Cover and chill in the refrigerator for 30 minutes.
  • Separate the dough into 6 equal sized balls and place on a parchment or silpat lined baking sheet, leaving room between them for spread.
  • Bake in a 350℉ preheated oven for 10 - 12 minutes, then remove from oven and allow cookies to rest on the baking sheet for 10 minutes. After 10 minutes, transfer cookies to a wire cooling rack.
  • While cookies are cooling, mix together the coconut and sweetened condensed milk. Place mixture in the refrigerator while you melt the chocolate topping.
  • In a microwave safe bowl, heat the chocolate chips on high power in 20 second increments, stirring between heat cycles, until chocolate is fully melted and smooth.
  • Top cooled cookies evenly with the coconut mixture and then the melted chocolate. Place almonds on top before chocolate fully sets.

ALMOND BARK/CANDY MELTS/CHOCOLATE MELTING OPTIONS:
Microwave: use a microwave safe bowl and heat chocolate in 20 second increments, stirring between heat cycles until smooth.
Stovetop: melt chocolate over low heat, stirring constantly, remove from heat as soon as chocolate is melted; double boiler can be used if desired.
Slow Cooker: add chocolate to oven safe dishes or a crock pot divider and place in slow cooker (mason jars work well for this); cover, set to low for 1 - 2 hours, stir before using. You can melt multiple types of chocolate at once using this method.
