Even though we’re having an absurdly warm fall, it’s still cool enough to enjoy drinks and dinner on the patio while watching the kids play touch football in the yard.  I can’t get enough of it.  Makes my heart full.

How do you make Thanksgiving Leftovers Casserole (Step-by-step)

First, mix mayonnaise into turkey until meat is moistened.

Then, in a greased casserole dish, layer mashed potatoes, turkey, cranberry sauce, then stuffing.

Next, bake until warmed through and stuffing is getting toasty (I did mine in a loaf pan and used the toaster oven, it was perfect at 25 minutes).

Finally, drench with gravy, serve with some sweet potato casserole and a side of pecan pie.

I always get teased that I make way (way, way, WAY) too much food, but it’s for good reason.  I am firmly in the camp that believes Thanksgiving dinner is wonderful (magic even!), but the real reason I cook is for the leftovers.  (I’m just being honest here).

Days upon days (weeks and months if you freeze some!) of deliciously prepared foods, sorry but it just doesn’t get much better than that.

But let’s get down to brass tacks and talk about leftovers, because YASSSSSS!!!  LEFFFTOVERSSSSS!!!!!  I’m gonna say right now, if you’re not a food mixer, click away from this post. Go right on with your happy self to the next recipe, because this one’s not for you.

Ingredients
 

  • Mashed potatoes 
  • Mayonnaise
  • Turkey cooked/shredded
  • Cranberry sauce
  • Stuffing
  • optional: gravy

Instructions

  • Mix mayonnaise into turkey until meat is moistened.
  • In a greased casserole dish, layer mashed potatoes, turkey, cranberry sauce, then stuffing.
  • Bake at 375° until warmed through and stuffing is getting toasty (I did mine in a loaf pan and used the toaster oven, it was perfect at 25 minutes).
  • Drench with gravy, serve with some sweet potato casserole and a side of pie.
  • ENJOY!
