This Sweet Potato and Sausage Hash is my favorite breakfast recipe and I think it's soon to be yours too!
I'm not sure what it is about the beginning of July that makes me panic about the way I'm eating, but it happens every. single. year. Maybe because we're exactly half way through the year? Or because it's been exactly six months since my New Year's panic session? Or possibly, coming off of Memorial Day and 4th of July where food and alcohol is in abundance. There's also the fact that while my kids have been enjoying the pool for months, it's just now getting to a temperature I enjoy so - hello bathing suit!
Whatever the cause, I find myself re-evaluating my food choices in July. And usually I'm disappointed with myself. This year is no exception. So, starting a few days ago (yes, I actually ate healthy on the 4th!), I went back to my paleo diet. I'm not doing a hardcore whole30 this time, because I'm not prepared to survive without wine (judge me if you must - I can handle it). But I know my body feels better, and my pants button easier when I follow this diet.
Why am I going on and on about this you ask? No, no, I'm not going to try to convince you to do it with me! (Although if you want, I'm happy to help support your journey!). Rather, I'm just giving you a painfully long winded introduction to my favorite breakfast. And honestly, I love (love love) this Sweet Potato & Sausage Hash recipe even when I'm not cutting out grains and dairy, so hopefully you'll enjoy it regardless of what diet you subscribe to!
Nicholas is looking at my cookie stash and wondering where it all went wrong. Ha ha! No, but really he wanted to try using the knife and I told him no. I'm thinking we should wait until he's at least three. Right?
I look for the sausage with the least amount of unpronouncable ingredients. You can find really really compliant sausage at some specialty markets, but I find there's usually a couple at my market that are close enough for my comfort. We use mild because the kids enjoy this dish too, but you're more than welcome to add spicy sausage if you want a little heat.
Between the sweet potato and the sausage, this dish is on the sweeter side. I like it that way and use sweet onions as well, but if you wanted to mitigate some of that sweetness, you could absolutely use regular white onion instead.
I like to make a really large batch of this ahead of time and freeze it in smaller portions so I'm never scrambling for a healthy meal. Most often we enjoy this for breakfast, but I've been known to eat is at all times of the day. It freezes and reheats really well. Yay!
Generally I just pile it into a bowl and just dig in, but occasionally I'll dress things up with a fried egg on top or some baby spinach leaves stirred in. Hubby really likes it in a hoagie roll, and my kids prefer it with a side of overly toasted toast.
If you made it mild for your kids or hubby and prefer yours spicy, I highly recommend a generous smattering of sriracha (rooster sauce) over top. Mmmmmmm.
Sweet Potato and Sausage Hash, Ingredients:
- 1 pound pork sausage (usually found near the bacon)
- 1 medium/small sweet yellow onion, diced
- 4 - 6 cloves garlic, minced
- 1 large sweet potato, diced
- optional garnish: chives, hot sauce, fried egg
Sweet Potato and Sausage Hash, Directions:
- Brown pork sausage in a large pan or skillet (I love my cast iron for this recipe!), drain excess oil and return to pan.
- Add diced onion and garlic. Cook on medium/low heat until garlic is fragrant and onions are becoming translucent.
- Stir in diced sweet potato and cook covered for 5 - 10 minutes, until potato is fork tender.
