Paleo Banana Muffins Ingredients:
- 5 ripe bananas, pureed
- 5 eggs
- 1/4 cup coconut oil (melted)
- 2 teaspoons baking soda
- 1 1/2 cups hazelnut flour
- 1 1/2 cups almond flour
- 1 cup smashed walnuts
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 tablespoon real vanilla extract
Paleo Banana Muffins Directions:
- Stir ingredients together and pour into a muffin tin. (I strongly suggest using silicone baking cups, as the muffins tend to stick to paper.)
- Bake at 350 degrees for 20 to 25 minutes.
- Enjoy!

Looks great! I have not purchased hazelnut flour before! I think I am going to have to sub more almond meal till I get some. Making these now for our Saturday afternoon car trip!!

OK, just came out of the oven. I used all almond flour and I put it all in a blender, then hand stirred in the extra nuts, which I used pecans instead of walnuts. THEY TURNED OUT AWESOME!! My silicon muffin cups are smaller than normal, so I put the left over batter in some little tart pans and made "muffin tart/cakes". Same awesomeness! Thanks for the recipe! My 4 yr old loves them too! How excited I am that they do not have any sweetener, but she loves them anyway!
