This Creamy Sausage Potato Soup for the Slow Cooker crock pot is both a sanity and budget saver. I’m not sure why dinner is such a struggle, but it is. Probably the relentlessness of it. (Wait, I have to do this again?!)
I love cooking (love love love!), but oh my goodness, every single night? That will drive anyone a little crazy. And I’m going to admit to you that we eat out kind of a lot.
We tend to go out once or twice a week, and sometimes for lunch too. Nothing fancy, just small local places usually, but it’s a good way for us to decompress and come together as a family.
After homeschooling all day, writing recipes and working in the kitchen, spending one more minute in the house tending after my five little fireballs just seems like too much. I need to go somewhere that I’m not responsible for making everyone happy.
Unfortunately (or maybe it’s a good thing!) we can’t afford to go too crazy with the dining out – even at an inexpensive restaurant, feeding seven people gets pricey fast.
To combat this, I like to rely on double cooking (making a double batch of something so I don’t have to cook another night), and my slow cooker (also my husband, major props to him for making dinner many nights!).
At least with these methods I don’t feel like I’m playing chef and servant while the rest of the family is enjoying dinner. I’m able to sit down right along with them and have a nice meal.

If you throw in some greens at the end, it’s a full meal. Just grab a glass of wine (maybe milk for the kids), and you’re set! And bonus, if you make a double batch this can totally go in the freezer for another day.

For the shredded potatoes, I made it easy on myself and used a bag of hash browns! From the freezer section or from the refrigerator section is fine.
If you purchase from the freezer section, you may want to let them thaw first before adding. Not strictly necessary, just a suggestion!

Creamy Sausage Potato Soup for the Slow Cooker
Ingredients
- 1 pound browned/crumbled sausage I like to make a large batch ahead of time and freeze in 1lb portions
- 4 cups shredded potato
- 4 cups chicken stock here's how to make it yourself
- 2 cups sweet corn kernels
- 1 cup heavy cream whole milk or half & half will work too
- optional: greens My preference is mustard greens or kale, but a bag salad works just fine in a pinch!
Instructions
- Add sausage, potato, corn, and stock to a slow cooker (here's the one I have and love) and stir. Cook high for 4 hours or low for 6 hours.
- Stir in cream and cook an additional 15 minutes until everything is heated through again (don't let it boil).
- Pour into bowls over greens and enjoy!

What kind of sausage? There are all kinds of sausage….Italian, which comes in spicy, original and sweet. Breakfast sausage, which comes original, hot, mild, maple, etc.

My guess is italian sausage.Sometimes it's sold out of the casing.I will use lactose free milk for this and trader joes chicken sausage.

great question! this recipe is so versatile, you can really use whatever type of sausage suits your mood. We usually use mild breakfast sausage (found near the bacon in most markets), but i've used mild and hot italian with great success as well!

I tried this and really enjoyed it. Instead of hash brown potatoes, I was a bit more lazy- I used 1 pkg of bear creek creamy potato soup. And instead of corn, I used mushrooms. Meal was prepared in less than 10 minutes. Thanks for sharing this yummy idea!
